The Vines of Mendoza is a private-vineyard resort and spa in Los Chacayes, in the heart of the Uco Valley, and a member of Leading Hotels of the World. Each year its winery crafts hundreds of bespoke small lots for the owners of its private estates, in one of the valley’s most singular winemaking projects.
The estate is home to Siete Fuegos, the restaurant of Francis Mallmann: cooking over open fire — the seven ways of cooking with embers — facing the Andes.
